Pancake Tuesday

The best thing about easy recipes for me, is getting other people - especially wee people involved! We had my niece staying with us this weekend, so we thought we'd do a practice run for Pancake Tuesday. She was really excited and enjoyed being able to make the pancakes from scratch and see what went into them, plus we could work on her spelling/handwriting when she wrote out the recipe beforehand! I thought i'd share her handiwork here, seeing as she was proud as punch!

For failsafe fluffy American-Style Chocolate Chip pancakes:

2 Cups Flour
1 Tsp Baking Soda
1 Tsp Salt
1 Tbsp Sugar
1 Egg
2 Cups Buttermilk
1.5 Tbsp Butter (Melted)
A Handful (of bowlful) of Chocolate Chips

1. Sift all the dry ingredients together into a bowl.
2. Add the egg, buttermilk and melted butter into a bowl and whisk together.
3. Make a well in the dry ingredients and pour in the wet ingredients. Combine. 
If you need to, add a splash of milk. The batter should be quite thick.
4. Leave to sit in the fridge for 15 minutes.
5. Ladle pancakes into a lightly buttered frying pan on medium heat. 
I'd say medium size (around 3/4 ladle) works best as 
any bigger and they become difficult to flip!
6. Sprinkle chocolate chips on as the pancake cooks into the uncooked side.
7. When bubbles appear around the edges, and a few in the middle, FLIP!
8. Top with your preferred toppings and eat in a big stack

This was a super easy recipe that kids could do pretty much all of, minus the actual cooking part. I think the fact that she took ownership and was involved in producing the food made her a lot more interested in eating it! If you have any easy recipes to make with children, i'd love to hear 'em!
